We have found that some of the best boat meals are prepped at home where you have everything you need and then you just finish down on the boat.
Pick up some good country ribs. Boneless are not bad, but the bone in country ribs have a little better taste and are usually a little more tender...but you are stuck wit the bones
At home: Boil your ribs in water for about 1.5 - 2 hours. This really makes the ribs nice and tender. I usually throw in some fresh onion peels, salt, pepper, garlic salt or frsh garlic, thyme, and any other seasonings I see sitting on the counter. After 2 hours, pull them out and drain. Put in an disposable aluminum foil tray and cover in your favorite BBQ sauce. We get a big jug of catleman's sauce at Trader Horn for a few bucks. It is the best stuff for the least price. Cover and throw the tray in the cooler.
Put some extra sauce in a tupperware container for adding down at the boat.
At the boat: Heat your grill up to medium temperature. You don't want it too hot. All you are going to do is heat up the ribs. They are already cooked, all you need to do is warm them up to desired temperature. Also, if you make it too hot the BBQ sauce will begin to burn.
